A Love Letter To Tofu

Sometimes tofu gets a rough deal.

When people joke about veganism, they often laugh about sad blocks of white stuff with zero flavour.

But here’s the truth. Tofu is one of the greatest foods on the planet and it is delicious, nutritious, versatile, and affordable.

This incredible ingredient has a history that stretches back more than 2,000 years. Created in China and spread through much of East Asia, tofu has been feeding people for many centuries. To treat it as a bland punchline is not just boring and predictable, but shows how little people really understand about food history.

For me, tofu is one of the most exciting and flexible ingredients. I can crumble it into a pan with spices and vegetables to make a breakfast scramble. I can slice it and fry it until it is crisp on the outside and juicy on the inside, ready to dunk into a dipping sauce. I can bake it with marinades until it soaks up flavours like a sponge, or I can blend it into silky desserts.

And it can be even simpler than all that. A pressed block of good quality tofu cut into cubes and placed in a fragrant miso broth is hard to beat.

When I talk about veganism, I always want to remind people it is about compassion and possibility, not restriction. Tofu is a perfect example of that. It is not something you eat because you have to. It is something you eat because it is delicious, versatile, and affordable.

Tofu is no joke. Tofu is pretty fucking awesome!
