Compassionate feast
This is not a vegan meal you will be able to get your hands on, unless I can talk my mother-in-law into staging a supper club with me.
We recently celebrated both Josh and his sister Sophia completing their university degrees, so that meant a jumbo vegan meal with the family to mark the occasion.
Check out the glorious Middle Eastern inspired meal Sara prepared for our party. Don’t drool!
The above photos show the starters for the meal, including a squash dip topped with date syrup and sesame seeds. Below this is the stunning mezze platter.
Now on to the impressive mains.
Cucumber, roasted tomato, mint, parsley, walnut, yoghurt and date syrup salad.
Tabbouleh salad.
Ful medames. Slow cooked fava beans flavoured with lemon, cumin and garlic.
Baba ghanoush topped with yoghurt, saffron oil and pine nuts.
Saffron spiced rice with lentils and crispy onions.
Tender okra cooked with garlic and tomato.
This is what all of this vegan glory looked like on my plate.
This one was of the best meals I’ve enjoyed in recent times.
Of course a party isn’t a proper party without a giant vegan cake. Ms. Cupcake was put in charge of supplying this huge Victoria Sponge for our table. Even for me it was a struggle.
Wow. That’s a lot of tasty food.
How awesome would it be if my mother-in-law Sara hosted a vegan supper club with this amazing menu? I’m working on it!
